Two units each with a pair of one weapon (as opposed to two squads with mixed weapons) gives you two different things that are good at a particular job. If you have two Melta/Plasma squads and want to kill a Land Raider, you need to move both units into range to engage it in order to have anything like a reasonable chance. Contrawise, if you have Plasma/Plasma and Melta/Melta teams, one unit can engage the Land Raider while the other performs some other task (and you'll still have the same odds of overall success.)

 

Counter-intuitively, specializing units in your army often makes the army more flexible on the game table, rather than less.
